Grilled BBQ Steak Salad
One medium zucchini
6 oz fresh pre-sliced portabellas
Three plum tomatoes halved
1-½ lbs NY Strip Steak
1 Tsp Morton Kosher Salt, divided
½ Tsp pepper
2 Tbsp Extra Virgin Olive Oil
4 oz Baby Arugula
4 Tsp DAMI’S FAMOUS BBQ Sauce (divided)
4 Tbsp Caesar dressing, divided
1. Preheat grill to 400. Cut zucchini in half lengthwise. Discard stems and gills (dark brown layers) from mushrooms. Cut tomatoes in half.
2. Season steaks with ½ teaspoon salt and pepper. Place steaks on grill 3-4 minutes on each side or until steak is 145 F. Remove steaks from the grill, let stand 5 minutes before slicing.
3. Combine zucchini, tomatoes, portabellas, oil, and remaining ½ teaspoon salt. Place vegetables on grill; grill 2-3 minutes on each side or until tender and grill marks begin to show.
4. Remove from grill, cut into bite-size pieces. Slice steaks divide salad greens onto four serving plates; top with vegetables and steak. Drizzle each salad with one teaspoon of DAMI’S FAMOUS BBQ Sauce, and salad dressing. Makes four servings.
