Pineapple Curried Chicken Salad
¼ cup olive oil
2 cups cooked chicken breast, cut into pieces
One chopped red apple, peeled, seeded
One rib celery, chopped
¼ Tsp cayenne pepper
½ Tsp curry powder
2 cups pineapple chunks
¼ cup chopped peanuts
2 Tbsp Dami’s Famous BBQ Sauce
3-4 Tbsp mayonnaise
Drizzle Dami’s Famous BBQ Sauce
1. Remove chicken from package and place into a bowl. Season chicken with salt, and pepper. Place a skillet pan over high heat. Add chicken to skillet, and reduce heat to medium-high. Cook on one side for 8 to 10 minutes, turning once. Add more oil to skillet, if needed. Remove chicken from fire. Let cool for 10 minutes. Meanwhile chop the apple, celery, and pineapple setting aside.
2. Cut chicken breast into pieces. In a medium-sized mixing bowl, add in chicken, apple, celery, pepper, curry, pineapple, peanuts, Dami’s Famous BBQ Sauce, and mayonnaise. Cover bowl, with foil and place into the refrigerator. Sit in the fridge for at least two hours. Once ready to serve, remove the bowl from refrigerator. Take a spoon, and scoop just enough to fit onto a Kaiser roll. Drizzle with more Dami’s Famous BBQ Sauce if desired. Serve with a green salad or fresh fruit.
