1 cup uncooked quinoa
1 Tsp vegetable oil
2 cups chicken or vegetable broth
1 Tbsp curry powder
1. Place the quinoa into a mesh strainer. Rinse thoroughly under cold water. Make sure you drain all the water. Next place vegetable oil into a saucepan over medium-high heat. Add the quinoa to pot, stirring continuously for about 2 minutes.
2. Add in chicken broth, curry powder, and bring to a heated boil. Reduce heat to medium-low, and cook for 15 minutes. Remove pot from the stove, and let stand for 5 to 7 minutes. Fluff quinoa with fork and serve.
Makes 5 to 6 servings
