Strawberry Chocolate Cake
- One box chocolate cake mix (do not follow directions on box)
- Two eggs
- 2 cups diced strawberries
- 3 Tsp almond extract (divided)
- ½ cup evaporated milk
- 1 cup granulated sugar
- One stick of butter, melted
- ½ cup chocolate chips
1.Set your oven to 350 F. Grease and lightly flour 9x13 inch cake pan. In a large mixing bowl, mix cake mix, eggs, two teaspoons of almond extract and one cup of strawberries. Be sure to mix all of the ingredients well by hand, and blend well before adding the remaining strawberries. Bake for twenty-five to thirty minutes. The cake will pull away from the sides of the pan.
2.Next heat all ingredients to a boiling point in a saucepan. Boil for one minute over low, medium heat. Remove from heat and add almond extract and chocolate chips. Blend until all chips are melted. Return to heat and cook until frosting thickens. Spread icing on the cooled cake. Top with whipped cream or left over strawberries if you have them.
Makes 8 to 10 servings.
