Baked Sweet Potato Crumble
2 ½ Lbs. sweet potatoes
½ Cup butter
½ Cup sugar
½ Tsp Salt
½ Tsp Vanilla Extract
½ Cup milk
½ Cup brown sugar
½ Cup flour
1 Cup chopped peanuts
2 Tsp cinnamon
1.In a large stockpot fill a little more than half with water. Add in sweet potatoes, and
bring to a heated boil on high heat for 45 minutes. Drain, and remove potatoes from water
let cool. Once potatoes are completely cool, peel potatoes, and place into a large bowl.
Next add in ¼ cup butter, ½ cup sugar, eggs, salt, vanilla extract, and milk.
2.Mix mixture together with a slotted spoon and place in a 9-inch baking dish. In a small
bowl, mix brown sugar, remaining butter, flour, peanuts, and cinnamon. Crumble mixture
over sweet potatoes. Bake at 350 F for 40 minutes. Makes six servings.
