Paprika Buttered Cauliflower
- Two small cauliflowers, about 1 ½ lbs. each
- ¼ Tsp sea salt
- 4 green onions, thinly sliced
- 4 Tbsp, butter
- 1 Tbsp paprika
1.Remove green onions from the package. Next slice green onions very thinly, and set aside for later use. Cut off the tough stem ends of each cauliflower and remove most of the outer leaves. Leave the cauliflowers intact. Place the cauliflowers in a pot, filled with about 1 ½ inches of boiling salted water, flower side down. Cover.
2.Steam about fifteen minutes until tender crisp. Meanwhile, in a skillet sauté the onions in heated butter until soft. Add paprika. Drain the cauliflowers. Arrange on a serving dish. Top with the onion mixture. Serve immediately.
Makes four servings.
