Spicy Mashed Potatoes
- 1 lb. red potatoes cut into 1-½ pieces
- ½ cup buttermilk
- 2 Tbsp butter, at room temperature
- ½ Tsp salt
- ½ Tsp black pepper
- ½ Tsp white pepper
- ½ Tsp red pepper
- 1 Tbsp chopped chives or finely chopped scallion
1. In a large pot, combine red potatoes with enough salted water to cover by 1 inch. Over high heat, bring to a boil; reduce heat, to medium. Simmer until tender when pierced with a fork, about twenty minutes; drain well. Return potatoes to same pot over low heat.
2.Mash with buttermilk, butter, salt, black, white, and red peppers until desired consistency. Remove from heat; stir in chopped chive or scallion. Next top with additional butter and sprinkle with chives or scallions. Makes four servings.
