Pineapple Ginger Glazed Ham
6-7lbs bone-in shank portion smoked ham
2 Tbsp whole cloves
1 ½ cup pineapple preserves
½ cup honey
2 Tbsp apple cider vinegar
2 Tbsp grated peeled fresh ginger
1. Preheat oven to 325F. Next line a roasting pan with foil. If necessary, clean skin from ham; trim fat to ¼”. Place ham on a rack in roasting pan, wide-cut side down. With knife score fat into ¼”-deep crisscross pattern. Place one clove in the center of each. Roast until the thickest part of ham is loose from the bone for about one hour and thirty minutes.
2. Meanwhile, in a small pot over medium-heat combine preserves, honey, vinegar, and ginger. Cook, stirring, until melted; cool slightly. Brush ham with pineapple mixture several times during the last thirty minutes of cooking time. Let stand for ten minutes before slicing.
