Spiked Chicken Burgers
- 1 ½ lb ground chicken
- ¼ cup Mayonnaise
- ½ cup Blue moon or Stone IPA beer
- ¼ cup breadcrumbs
- ¼ cup crushed crackers
- 1 Tbsp minced fresh thyme
- ½ Tsp salt
- ¼ Tsp black pepper
- 4 ounces Fontina Cheese, cut into four slices
- 4 Hamburger Buns
- 4 lettuce leaves, romaine
- 1 large tomato, cut into eight slices
1.Position broiler racks so that top of burgers on the rack in broiler pan will be four inches from heat. Preheat broiler, and coat broiler pan with cooking spray. Remove ground chicken from package, and place into a medium bowl. Next combine chicken, mayonnaise, breadcrumbs, crackers, beer, thyme, salt, and pepper. Shape into four, four-inch patties, about three fourth inch thick.
2.Place on rack in broiler pan. Broil burgers, turning once until meat thermometer inserted into thickest part registers 165 F, about five to six minutes per side. Place one slice of cheese on top of a burger. Continue broiling until cheese melts, one to two minutes. Serve on buns with lettuce and tomato. Makes four servings.
