Almond Crusted Chicken

  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • ½ cup Parmesan cheese
  • 1 Tbsp Italian seasoning
  • ¼ Tsp cayenne pepper
  • ½ cup almonds, chopped
  • 6 chicken breasts (boneless, skinless)
  • 9x13 Inch dish


1. Preheat oven to 350 F. Lightly grease a 9x13 Inch baking dish. Chop garlic, and place into a small bowl. Add in olive to the bowl with garlic. In a large zip lock bag, mix together breadcrumbs, Parmesan cheese, Italian seasoning, cayenne pepper, and almonds.

2. Dip each chicken breast into oil mixture, then in breadcrumb mixture. Place each chicken breast into baking dish. Top chicken with any remaining crumbs. Bake for 30 minutes.
