- 2 Tbsp vegetable oil or olive oil
- 2 cups okra
- ¼ Tsp sea salt
- ¼ Tsp cayenne pepper
- 2 garlic cloves, thinly sliced
- 1 shallots, chopped
- ¼ cup of chopped peanuts
- 1 Tsp lemon juice
1. Peel garlic, slice thinly and place into a small bowl. Now peel shallots, and chop finely placing into bowl with garlic. In a large skillet, heat oil over high heat. Add in okra, and season with salt, and cayenne pepper. Cook okra for 5 minutes, or until tender.
2. Next add in the garlic, and shallots and reduce heat to medium. Cook for an additional 4 minutes. Stir in chopped peanuts, and lemon juice. Cook for 1 more minute.
