- 4 sea bass fillets (1 ½ lbs each boneless)
- ½ Tsp sea salt
- ¼ Tsp ground ginger
- ½ Tsp black pepper
- 2 Tbsp Peanut oil
- 1 Tbsp butter
1. Remove the sea bass from package. Rinse fillets, and pat dry with paper towels. Next heat an iron cast pan over high heat. Add the peanut oil to the pan. Season sea bass with salt, black pepper, and ginger.
2. If the pan is large enough, add in all 4 fillets. If it’s not, you can cook the sea bass in two batches. Immediately reduce heat to medium high heat. Cook the sea bass for 3 to 5 minutes per side turning once.
3. When the fish is almost finished cooking about 2 minutes left, add in butter, swirl the pan around, and turn off heat. Leave the pan on the fire for the remaining 2 minutes. Once finished remove pan from heat. Serve immediately. Don’t let the fish cool or rest.
