- 2 zucchini, quartered lengthwise
- 1 Tbsp olive oil or vegetable oil
- ½ Tsp garlic salt
- ½ Tsp onion powder
- 1 Tsp chipotle pepper
- 1 Tsp Italian seasoning
- 2 Tbsp red wine vinegar
- ¼ cup Parmesan cheese
1. Preheat grill for medium heat, and lightly oil the grate of the grill. Rinse zucchini, cut lengthwise, and place into a medium sized bowl. Now season zucchini with garlic salt, onion powder, chipotle pepper, and Italian seasoning.
2. Cook zucchini on preheated grill 3 to 4 minutes on each side. Brush zucchini with red wine vinegar and cook for 1 more minute. Remove zucchini from grill, and sprinkle Parmesan cheese on top.
