Apple and Smoked Salmon Salad
½ English cucumber, cut into ¼ thick
¼ cup olive oil
3 Tbsp chopped fresh dill
2 Tbsp Dijon mustard
4 Tsp lemon juice
½ teaspoon sugar
¼ teaspoon cracked pepper
7 cups baby arugula, about 5 ounces
2 apples, cored, thinly sliced
8 slices smoked salmon, 8 ounces
1. Using 1 ½ inch cookie cutter, cut cucumber slices into shape; reserve. In large bowl, whisk oil with dill, mustard, juice, sugar, salt, pepper and one teaspoon water.
2. Now just before serving, add arugula, apples and cucumber, tossing gently to coat with dressing. Divide among individual serving plates. Roll each salmon slice and place one on each salad.
