- 4 Tbsp butter
- 2 Tbsp flour
- 1 cup hot milk
- 1⁄4 Tsp salt
- 1⁄4 Tsp black pepper
- 1⁄2 cup grated cheese
- 4 eggs
1. Preheat oven to 350 F. Have a deep buttered dish ready. Separate the white and yolk
of the eggs; beat the yolks until thick and creamy. Set aside. Melt the butter; add the
flour, salt and pepper, stirring well.
2. Boil milk and gradually add it to the mixture stirring until thick and smooth. Remove from the heat and add cheese. Add the beaten egg yolks and fold in the stiffly beaten egg whites.
3. Pour the mixture into the deep buttered dish, remembering that the mixture will rise to two or three times its height. Set the dish in a pan of hot water and bake for thirty to forty minutes slowly in oven.
