Double Chocolate Cherry Cookies
1 ¼ margarine or butter
1 ¾ sugar
1 Tbsp vanilla extract
3 ½ cups unsifted flour
¾ cup unsweetened cocoa
½ Tsp baking powder
½ Tsp baking soda
¼ Tsp salt
2 (6-ounce) jars maraschino cherries, well drained and halved
1 (6-ounce) package semi-sweet chocolate chips
1 (14-ounce) can sweetened condensed milk
1.Preheat oven to 350 F. In a large mixer bowl, beat margarine and sugar until fluffy; add eggs and vanilla. Mix well. Combine dry ingredients; stir into margarine mixture (dough will be stiff). Shape into 1-inch balls. Place 1 inch apart on ungreased baking sheets. Press cherry half into center of each cookie.
2. Bake eight to ten minutes. Cool. In a heavy saucepan, over medium heat, melt chips with sweetened condensed milk; continue cooking about three minutes or until mixture thickens. Frost each cookie, leaving top of cherry showing. Store loosely covered at room temperature.
