2 Tbsp vegetable oil
1 lb ground veggie meat
2 Tbsp garlic, chopped
1 medium onion, finely chopped
1 Jalapeno pepper, seeded and finely chopped
½ red bell pepper, seeded and chopped
½ green bell pepper, seeded and chopped
3 Tbsp chili powder
1 Tsp cumin powder
1 ½ cup re-fried beans
1 ½ cup DAMI’S FAMOUS BBQ Sauce
1 ½ cup grated cheddar cheese divided
¼ cup cilantro
1. In a large skillet on high heat, add in vegetable oil, until heated. Next add in veggie meat, garlic, onion, jalapeno pepper, green and red bell pepper, chili powder, and cumin; cook stirring until meat is heated through about seven minutes, reducing heat to medium. Now add in re-fried beans, DAMI’S FAMOUS BBQ SAUCE and cook until heated stirring occasionally for five minutes.
2. Add in ½ cup of grated cheddar cheese; stir until melted about two to three minutes. Next arrange the tortilla chips on a large serving platter. Top with veggie mixture, sprinkle on top remaining cheddar cheese and ingredients if desired.
