Cauliflower Au Gratin
3 cups fresh cauliflower (medium head cooked and drained)
2 Tbsp fat free butter
2 Tbsp flour
¼ cup reduced sodium chicken broth
1 ½ cups skim milk
1 cup shredded reduced fat cheddar cheese
¼ Tsp black pepper
½ cup whole wheat bread crumbs
1. Preheat oven to 350. In medium saucepan, melt butter; stir in flour and chicken broth. Gradually stir in milk; cook and stir until thicken. Add cheese and pepper; stir until melted.
2. Add cauliflower; mix well. Place into 1 ½ baking dish. Sprinkle with breadcrumbs. Bake uncovered twenty to thirty minutes.
